Potato Taco


A taco is a traditional Mexican dish composed of a corn or wheat tortilla folded or rolled around a filling.

Ingredients:
  • Potatoes, peeled and chopped  5 Large
  • Chopped onions                       1 Cup
  • Shredded Cheddar cheese        1 1/2 Cup
  • Corn tortillas                            1 (12 ounce) package
  • Ranch-style salad dressing       1 Cup
  • Salt                                           To taste
  • Pepper                                      To taste

Method:

Bring a large pot of salted water to a boil.  Add potatoes and cook until tender, about 15 minutes. Drain potatoes and transfer to a large bowl, mash until smooth. Stir in onions, salt, pepper and cheese, mix well. 

Spoon 2 heaping tablespoons of potato mixture into the center of each tortilla and fold in half; secure with a toothpick.

In a large skillet add enough oil to reach 1 inch in depth and heat over medium-high heat. Fry tortillas until crispy. Serve with salsa or ranch dressing for dipping.

Any type of steamed veggie acc. to your taste can be added like beans, cabbage,tomatoes, peas, etc. It gives a yum taste. Everyone surely loves it.

Note:
  • You can use salsa dressing in place of ranch-style dressing.
  • Lemon juice, few drops, can also be added
  • Green or white, any onion you can use.
  • You can use any, corn or wheat tortilla.
