Gobhi Manchurian

Gobhi Manchurian is an Indian Chinese fried cauliflower food item popular in India. Gobhi Manchurian is the result of the adaptation of Chinese cooking and seasoning techniques to suit Indian taste.
There are two different variants of it, dry and with gravy. Both variants are prepared by using common ingredients.
It's taste can vary from mild spicy to hot and fiery based on the recipe and personal preference.

Ingredients:
  • Cauliflower/phool gobhi     1 med.
  • All purpose flour/maida      1 cup
  • Corn flour                            3 - 4 tbsp
  • Pepper Powder                    1/4 tsp
  • kashmiri Redchilli powder  1/4 tsp
  • Soya sauce                           1 tsp
  • Water                                   as required
  • Oil                                        for deep frying


Ingredients For the sauce:
  • Chopped spring onion             3/4 cup
  • Finely chopped capsicum        1/2 cup
  • Ginger and garlic Paste           4 tsp 
  • Green chilies, finely chopped  2
  • Soya sauce                               1 tbsp 
  • Tomato sauce                           1 tbsp
  • Vinegar                                    1 tsp
  • Pepper powder                         1/4 tsp
  • Salt                                            as required


Method:

Preparing the florets:

Firstly chop or break the gobi/cauliflower in medium size florets.
Heat water with salt and boil it. Blanch them for 15- 20 minutes. later drain it and keep aside.

Preparing batter and frying florets:

In a bowl mix together the ingredients for making the batter - all purpose flour / maida, corn flour, soya sauce, black pepper, kashmiri red chili powder and salt.
Add water and whisk to make a smooth batter without any lumps. The batter should be thick, not runny. Just like you made batter foe mix veg. Pakoras'.
Dip each gobhi floret in the batter and fry florets in hot oil. Depending on the size of your pan, you can fry at once or in batches. 
Flip for a couple of times more, so that the florets are evenly fried and light golden. Drain the fried gobhi florets on a kitchen paper towel.

Preparing the sauce:

In a pan, with 1 tsp oil add chopped ginger, garlic and green chilies. saute for a half a minute.
Then add the chopped spring onions & capsicum. Stir and fry till the capsicum is half or almost cooked.
Now, add soya sauce, tomato sauce, vinegar, black pepper and salt. stir and add fried cauliflower florets.
Stir fry for two to three minutes ensuring the spiced sauce coats the cauliflower florets well.
check the taste and add more of soya sauce or tomato sauce as per your taste. switch off the fire. 
Garnish it with chopped spring onions and serve it hot as a main course, snack or a side dish.

NOTE:
  • To make the dish more spicy, increase the quantity of ginger, garlic, green chilies, black pepper and red chili powder.
  • You can replace all purpose flour / maida with gram flour.
  • Add 2 tsp Cornflour mix with one cup of water while preparing sauce, if you need gravy Manchurian.
  • You can Pan fry florets if you don't need to deep fry. 
  • You can use white vinegar or apple cider vinegar.
