Roasted Red Capsicum Dip

Sweet and Salty Roasted Red Capsicum Dip / Chutney is perfect to go as a side dip of your evening snacks.

Ingredients:
  • Red capsicums    4 medium
  • Oil                       2 teaspoon
  • Onion(chopped)   2 small
  • Garlic chopped    5-6 cloves
  • Ginger(chopped)  1 tbsp   
  • Sugar                   2 tablespoons
  • Salt                       to taste


Method:

Preheat oven to 180°C. Quarter red capsicums and place them on a baking tray. 
Sprinkle salt and oil and roast them in the preheated oven for twenty to twenty five minutes.
Peel the outer skin and chop. 
Alternatively you can roast the capsicums and tomatoes directly on gas flame till the outer skin gets charred. 
Dip in cold water immediately, peel the charred skin off and chop them.

Now,Heat a pan. Put the onion and capsicums in it and saute it for a while. Add salt and mix. 
Then add chopped garlic and ginger (or ginger - garlic paste) and mix.

Add sugar and mix. Cook till the sugar dissolves. Remove the mixture from the gas. let it cool down.
when the mixture comes to normal room temperature, blends the mixture in a grinder.

Your chutney or dip is ready to serve.

Note: You can also use this dip in your sandwich and burger making. it tastes yum..!!
