Easiest way to prepare Raw mango chutney / kache aam ki launji mixed with some Indian spices and Jaggery.
Ingredients:
- Raw mangoes 3 large
- Jaggery 1/2 cup
- Sugar 1/2 cup
- Saunf 1 tbsp
- Jeera 1/2 tsp
- Fenugreek seeds 1 tsp
- Hing 1/2 tsp
- Turmeric powder 1/4 tsp
- Red chilli powder to taste
- Salt to taste
- 2 tbsp Oil/Ghee
Method:
Heat oil in a pan and add Fenugreek seeds, jeera, saunf, and hing and sauté for 1 minute. Now add turmeric powder, red chilli powder and salt to taste and mix well. Now add cubed / sliced / grated mangoes, jaggery, sugar and 1 cup of water and mix well. Cover the pan with a lid and cook for 10 to 15 minutes till the pieces of mango become soft and the gravy becomes thick. Let it cool and store in an air tight container in refrigerator.
Note:
- You can also add kalonji in it.
