Sweet Lemon Pickle / Nimbu ka Achaar
- Lemon 6-8
- Salt 1 tsp
- Red chilli powder 1/2 tsp
- Rock salt 1/2 tsp
- Black pepper powder 1/2 tsp
- Ajwain 1/2 tsp
- roasted fennel (jeera) powder 1/2 tsp
- Sugar 1 cup
Method:
Cut each lime into 4- 8 wedges (acc. to your choice). Place in a large bowl. Sprinkle with the salt. Cover it in a air tight jar and set aside in a cool dry place and under the sunlight too, stirring occasionally, for 5-6 days.
After a week, add all the remaining ingredients in the jar, and mix them properly. Keep the jar aside under the sunlight and stir it daily by shaking the jar, for about 1 - 2 weeks until the pickle must have absorbed the spices and develop color and flavor.
Note:
You can add or reduce the amount of sugar acc. to your taste and choice
