Corn Cutlets


Healthy Tasty and Crunchy, Step by Step Corn Cutlet / Corn Patties Recipe

Ingredients
  • Corn kernels             1 1/2 cup
  • Oil                             4 tbsp
  • Onions chopped        2 medium
  • Fresh mint leaves      15-20
  • Fresh coriander          a few sprigs
  • Potatoes boiled          2 medium
  • Salt                             to taste
  • Green chillies             2
  • Crushed red chillies   1/2 tsp
  • Fresh bread crumbs   1 cup


Method

Heat 2 tablespoons oil in a nonstick skillet. Add onion and saute. Boil and Drain corn and place in a bowl. Finely chop the cilantro and mint leaves.When onions turn light brown, add the corn. 
Add boiled and mashed potatoes, salt, chopped green chilies, crushed red chillies, coriander and mint leaves and mix lightly crush the contents. Now, Add the fresh breadcrumbs and mix. 
Heat 2 tablespoons oil in another large nonstick skillet. Divide into equal portions and shape each portion into a cutlets of an oval shape. 
Press lightly and place in the second tray in a single layer. Fry, turning sides, until both sides are equally hot golden.Serve any tomato sauce or ketchup. You can even cook in an oven. Drizzle a little olive oil over them and bake in a preheated oven at 180 ° C.
