Veg vermicelli is one of the easy and tastiest breakfast / evening dish, made with roasted vermicelli..!!
Ingredients
- Vermicelli 2 cups
- Potato,1/2 inch cubes 1 medium
- Carrot,1/2 inch cubes 1 medium
- Cauliflower 5-6 florets
- French Beans, Chopped 1/4 Cup
- Green peas 1/4 cup
- Capsicum,seeded and cubed 1 medium
- Salt to taste
- Oil 4 tbsp
- Mustard seeds 1/2 tsp
- Ginger,chopped 1 inch piece
- Onion ,chopped 1 medium
- Green chillies,slit 2
- Turmeric powder 1/4 tsp
- Lemon juice 2 tbsp
Note
Use Roasted Vermicelli Or If you are using normal Vermicelli Roast it lightly By using 1/2 tsp oil.
Method
Boil the potatoes, carrots and cauliflower in two cups of water until almost done. Add the green beans and peas and boil for five minutes. Drain and cool. Heat five cups of water, bring to a boil, add the toasted noodles, salt and two tablespoons of oil. Cook for one minute or until slightly undercooked. Drain, refresh under cold water and set aside. Heat remaining oil in a pan, temper with mustard seeds and curry leaves. Add ginger and onion. Saute well until the onion turns light brown. Add the green chillies and stir. Add cooked vegetables, green pepper, turmeric powder and saute for four or five minutes. Add the cooked noodles salt and stir gently. Cook for five minutes. Remove from heat. Mix the lemon juice and serve hot.
