Egg Salad


A Tasty Summer Salad - Quick and easy to prepare at home.

Ingredients 

  • Eggs                                        3 medium
  • New Potatoes - cooked           150 gm 
  • Gem Lettuce                            1 little
  • Cherry Tomatoes                     8
  • Cucumber, sliced and halved    1/4 of a whole 
  • Light Mayonnaise                     2 tbsp
  • Yoghurt                                    3 tbsp
  • Lemon Juice                             1tbsp
  • Black Pepper freshly ground     acc. to taste


Method 

Boil the eggs until hard - about 8 minutes. Cut the potatoes into small pieces. Wash and tear lettuce into small pieces. Halve the tomatoes and cut into slices and halve cucumber. Whisk mayonnaise, yogurt, lemon juice and black pepper. Cool the eggs under cold water and peel. Arrange the salad and potatoes on the plate. Cut each egg into quarters and add to the top. Pour over the dressing and serve.

Note
  • You can add fruits in it like grapes, Pineapple, etc..
  • A bit of Salad Cream can also be added.
  • Potatoes are optional.
