Palak Paneer



Palak Paneer in a thick curry sauce based on pureed spinach. It is a popular vegetarian dish. Palak paneer is one type of saag, which can also be made with mustard leaves. Palak paneer may be somewhat more watery than saag paneer.

Ingredients
  • Paneer (cubed)                    250 gm
  • Spinach                               2 large bunches
  • Ghee (clarified butter)          2 tbsp
  • Cumin seeds                        1 tsp
  • Onions finely chopped          2
  • Green chillis slit length wise   2
  • Ginger garlic paste                1 tsp
  • Red chilli pwd                      1 tsp
  • Coriander pwd                     1 tbsp
  • Juicy tomatoes(Puree)          2 big
  • Salt                                      to taste

Method

Remove stems, wash spinach thoroughly in running water. Blanch in salted boiling water for two minutes. Refresh in chilled water. Squeeze out excess water. Remove stems, wash and roughly chop green chillies. Grind spinach into a fine paste along with green chillies. Keep it aside.
Add ghee in a heavy bottomed vessel and add cumin seeds and let them splutter. Add the onions and sauté them till light brown. Don’t burn them. then, Add ginger garlic paste and fry further for 3 minutes.
Add the tomato paste and coriander powder and let it cook for 5-6 minutes on medium heat. Add the palak paste with salt and let it cook further for another 10-15 mins. Add the Paneer cubes and combine. Cook covered on low heat for 5 mins. serve it hot.
