Gajar Ka Halwa is a sweet dessert pudding associated mainly with the state of Punjab in India & Pakistan. It is made by placing grated carrot in a pot containing a specific amount of water, milk and sugar and then cooking while stirring regularly
Ingredients
- Carrots 1 kg
- Milk 1.5 litre
- Cardamom seeds 1 tsp
- Ghee 3 tbsp
- Raisins 2 tbsp
- Almonds 2 tbsp
- Pistachios 2 tbsp
- Sugar 450 gm
Method
Wash and grate the carrots. Soak the raisins in water for 30 minutes. Blanch and shred the nuts. Put the half litre milk to boil, when it starts boiling add the grated carrots. Cook for 5-7 minutes.
Add the remaining milk. Cook on a low flame for 1 hour stirring occasionally. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.
Add ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins. Mix it well.
Remove the gajar halwa from heat and arrange in a serving dish. Garnish with almonds and pistachios. Serve cold, hot or at room temperature.
