Cucumber Raita



Delicious Cucumber Raita..!!

Cucumber Raita is a variation of raita that can be used as a dip or a salad.  It is made by mixing together freshly chopped cucumber, green chillies, and curd or yogurt, and optionally finely chopped tomato and onion.

Ingredients:

  • Thick plain Yogurt (make sure its not sour)   2 cups
  • Cucumber (half grated and half chopped)     1 large (Peeled)
  • Roasted cumin powder                                1/2 - 1 tsp
  • Cilantro                                                       Few sprigs
  • Salt                                                             To taste ( try the black salt)
  • Chilli powder/ground pepper                        For garnish (optional)

Method

Add the yogurt along with the spices in a bowl. Beat well until it becomes smooth. Add the grated cucumber and mix well. Then add the chopped cucumber to the mix. Along with cilantro, Give it a good mix.

Serve garnished with some chilli powder/roasted cumin powder to taste. I also add few additional chopped cucumber pieces as a garnish.
