Mumbai Pav Bhaji Masala



It's a Mumbai's Favourite Street Food. A Most popular snack which is a mixture of various vegetables are boiled, mashed and cooked with a spicy masala and served with butter fried pav.

Ingredients
  • White Chana (Boiled)              1/2 cup
  • Potatoes,boiled and mashed 2 medium
  • Tomatoes,chopped                  2 medium
  • Onions,chopped                      2 medium
  • Green Capsicum,chopped       1 medium
  • Cauliflower,grated                   1/4 small
  • Green peas,shelled                  1/4 cup
  • Bottle gourd (Lauki),chopped  1/4 cup
  • Green Pumpkin, Chopped       1/4 cup              
  • Ginger,chopped                      1 inch piece
  • Garlic                                      8-10 cloves
  • Oil                                          3 tbsp
  • Green chillies,chopped             3-4
  • Pav bhaji masala                      1 1/2 tbsp
  • Turmeric Powder                     1/2 tsp
  • Red Chilli Powder                    1/2 tsp
  • Garam Masala                         1/4 tsp
  • Coriender Powder                   1/2 tsp
  • Salt                                         to taste
  • Butter / Oil                              3 tbsp
  • Pav                                          8
  • Coriander leaves,chopped          1/4 cup

For Garnish

1 medium chopped tomatoes
1 medium Chopped Onion
Few pieces of thinly sliced lemon

Method

Boil all the vegetables and White Chana in about 1 ½ cup of water, Except Onion, tomato and Capsicum. Don’t add too much water, just enough to cook. After the vegetables are soft and tender, mash them coarsely with a fork or potato masher.
Heat the oil / Butter in a frying pan over medium heat. Add and Fry the onions till they become transparent. Add tomatoes, green chilies, and ginger- garlic paste and sauté for 2-3 minutes until pasty. Next add salt,red chili powder, turmeric powder, Pav bhaji masala and all other masala's. Mix it well.
Add mashed vegetables. Using a spatula, simultaneously mash and stir all the vegetables for 10 minutes. Add about ¼ cup of water,only if Needed, and let it cook for a minute. Turn off the heat. Add lemon juice, mix it well.
Garnish it with Chopped Onion, Tomato, Coriander leaves and thinly Sliced Lemon. Serve it Hot with Toasted Pav Buns

Toast the halves Pav bun over a skillet using butter over medium heat until buns are golden brown from both sides.

Note:
You can add or remove Vegetables Acc to ur. Choice Like Carrot, Egg Plant, Beans.
You can add Coriender Leaves While Garnishing and In Between Bhaji Also.
