Egg Bhurji



The popular egg bhurjee is an easy way of cooking scrambled eggs with onion, tomato, ginger, chillies and garam masala. The tasty egg bhurji tastes awesome with rotis or naan.

Ingredients

  • Eggs                                           2
  • Medium sized onions, chopped   2
  • Small tomatoes, chopped            2
  • Chopped capsicum                     2 tsp
  • Cumin seeds (jeera)                    1 1/2 tsp
  • Turmeric powder (haldi)             1/4 tsp
  • Green chillies, chopped               2
  • Red chillies                                  1/4 
  • Salt                                             to taste
  • Oil                                              2 1/2 tsp
  • Coriander (dhania) leaves
  • Lemon juice                                1 tsp

Method 

First beat eggs in a bowl.
Take pan heat oil. Add onions till golden brown. Add chopped tomato and capsicum, saute it finely. Add all masalas. Then add eggs and stir well till it seperate into small pieces.
Garnish it with fresh chopped coriander leaves and Lemon juice. Serve it hot.

Note:
You can also add ginger garlic paste - 1 tsp while making it.
You can also add as many vegetable as you want to acc. to ur taste..like carrot,paes,beans,etc.
