Banana Pancakes



Ripe bananas make these pancakes extra special.

Ingredients
  • Ripe bananas,mashed            4
  • Refined flour (maida)             2 cups + 2 tablespoons
  • Baking powder                     1 teaspoon
  • Castor sugar (caster sugar)    2/3 cups
  • Buttermilk                             1 1/2 cups
  • Eggs                                      2
  • Oil                                         to cook
  • Honey                                    to serve

Method

Put refined flour, baking powder, castor sugar, buttermilk, eggs and bananas in a large bowl and mix well. Heat oil in a non-stick pan over medium heat. 

Pour a ladleful of the flour mixture on it and cook, until bubbles appear on the surface. Turn the pancake and cook till golden. Repeat with the remaining mixture. Serve drizzled with maple syrup or honey.
