Kuttu Roti / Paratha / puri



It is prepared especially on the occasion of navratri for the people who kept fast.

Ingredients
  • Kuttu Atta                                        2 cup
  • Rock salt                                          1 tsp
  • Oil                                                    1 tsp
  • Potatoes,boiled,peeled and mashed   2
  • Dry flour                                            for dusting 
  • Ghee or clarified butter                       for frying


 
Method

Combine together the kuttu atta, potatoes 1 tsp oil and salt. Add sufficient water and make flexible dough. Knead well. Divide the dough into eight pieces and shape them into round balls using dry flour. Roll out these balls into chapatti. Heat a griddle(tava). Reduce the flame to medium. Put one paratha on the tava and pour ghee in the form of trail along the outer edges of the paratha. Flip when the underside is cooked. Apply the ghee on exposed surface. Again flip and cook on the other side. Remove when well done on both sides. Serve hot.
Note:
If you want to make puri,  take small portion of the flour and make it into a small kneaded ball, in your palm. Then, shape the kneaded ball it into a puri /poori . Since the flour is gluten free the edges may spilt , do not worry just ensure that the pooris do not break from the centre. Heat oil in a frying pan and fry till the puri turns golden brown. Make all puris like this from the remaining dough, repeating the above-mentioned step.
Kuttu ki puri is ready to eat.
Also as we all know that during making puri we don't need dry flour for dusting.
